Lean Smoked Ham Paella

Spray Oil1 onion, sliced 1 red pepper cored, seeded and sliced 1 garlic clove, crushed 300 g long-grain rice 175 g (6 oz) lean, smoked ham, roughly diced 900 ml (1 1/2 pints) chicken or vegetable stock 1/2 teaspoon each paprika and ground turmeric (or a few saffron strands, if you have them) 100 g (4 oz) large prawns, thawed if frozen 100 g (4 oz) frozen peas salt and freshly ground black pepper
1 Heat a large frying pan and spray well with oil and cook the onion for 3-4 minutes until softened and golden. Add the red pepper, garlic and rice and stir-fry for 1 minute.
Add the ham, stock, paprika and turmeric (or saffron), bring to the boil and simmer for 12 minutes.
2 Stir in the prawns and peas and cook for a further 3-4 minutes, until the rice and vegetables are tender. Season to taste, then serve immediately.
