Quinoa with Salmon & Black Beans

Ingredients
1 cup quinoa, cooked and drained1 small can of salmon, drained1 15 oz can black beans, drained1/4 cup scallions, chopped1/4 cup cilantro, chopped2 tomatoes, chopped2 Tbs Extra virgin olive oilzest and juice of 1 lime1 tsp saltfresh pepper
Directions
Cook and drain the quinoa. Drain the black beans and the salmon. Chop the veggies. Mix the lime, lime zest, olive oil, salt, and pepper in a medium bowl with a whisk. Add the quinoa and stir to coat. Add the remainder of ingredients. Can be served warm or chilled. Makes 4 dinner sized servings.
