Lite Sweet Potato Muffins

4 cups all purpose flour4 tsp baking powder1 1/2 tsp cinnamon1/2 tsp salt1 tsp ground ginger2 stick butter, softened1 c brown sugar4 large eggs1 1/2 c pureed cooked sweet potatoes1/2 c milk1/2 c chopped walnuts
Makes 30 medium muffins. Whisk flour, baking powder, spices and salt together. Set aside. Preheat oven to 375 and put paper liners in muffin tins. Beat butter until creamy, add sugar and beat until fluffy. Add eggs one at a time beating after each addition. Gently fold in the sweet potato puree and the milk. Add flour mixture and blend well. Divide batter among the muffin cups. Bake until muffins are puffed and a toothpick inserted in the center comes out clean about 20 minutes. Serve
