Baked Plantains

4 Large Plantains1 tsp vegetable margarine1/4 cup of raisins1 cup of Splenda1/4 cup soy milk (any non dairy milk will do)1/4 cup water1 teaspoon allspice
Peel plantains and place in pot of boiling water for about 5 minutes. Drain water and mash plantains until they have a smooth consistency. Add all remaining ingredients. Adjust amount of Splenda amount to suit your taste. Mix all ingredients together well and place in a treated baking dish. Sprinkle cinnamon on top and bake at 325 degrees for about 30 minutes. After about halfway through, carefully cover with aluminum foil.
Remove from heat and enjoy. Best served either hot or cold. Goes well with a non-dairy yogurt or ice cream.
