Oregon Trail Beef Stew

1 tbsp butter*1 large onion, diced~1lb stewing beef, cubed~11.5 fl oz tomato juice (ex. 1 can v8)4 med potatoes, cubed2 large carrots, cubed1 parsnip, cubed1 med. tomato, cubed and seededbay leaf_______To Taste:peppersalt garlic powderWorcestershire saucedried thyme a large pinch of ground clovespaprika*olive oil can be used instead of butter
Melt butter in a med-low heat pot
Brown onions in the butter until almost soft and translucent
Add beef and cook until brown
Add spices- careful not to overdo it. You can add more later.
Add tomato juice, return to a simmer
Add cubed vegetables and add water just to cover the vegetables
Cook on med to low heat until vegetables are soft, and beef is cooked throughout
