Okra and chicken sausage omelete

6 pods of Okra1 tbsp of Butter (salted)About 1 - 1.5 tbsp of chopped Onions 5 large eggs2 Chicken Sausages (Light)A splash of Japanese MirinLemon juice (optional)Water (optional)
Makes 2 plate-sized portions.
Prep: Chop the okra and leave them in water with a bit of lemon juice (optional), this will help get rid of the goo.
Chop the sausages and onions.
Cooking: Heat up a pan and once it is very hot, put the sausages in. Let them get a bit golden and add the butter and the okra. Add about 2 - 3 tbsp of water if necessary to cook the okra. Once the sausages are golden and the okra is nearly cooked, add the onions and a splash of the Mirin Sake. Add salt and pepper to taste.
When the onions are cooked, pour in the 5 eggs, previously beaten.
You probably wont be able to take a neat omelet out from the pan, so it's ok if you mix the eggs around.
