Eggcalent Quiche

Ingredients
5 large egss.75 cups of shredded colby cheese or any cheese of choice2 cups of mushrooms chopped1 cup of onions1 10 oz box of frozen chopped spinach.5 cups of milkseasonings to taste
Directions
Crack eggs and beat in the milk.
Strain the spinach to an inch of its life and mix in.
Then add the vegetables and cheese.
Mix together very well.
Spray the muffin tin with cooking spray.
Fill the muffin cups nearly full. You'll get just under a cup into each muffin dent.

Bake in muffin tin at 325 for 35 to 40 minutes. They will look a little underdone but will set the first minutes after being taken out.

Will get 6 perfect servings (I used a jumbo muffin tin, so it will give you 12 perfect servings in a normal muffin pan)
