MB's Albondigas Soup

Ingredients
3lbs Ground Beef, 93% lean2 TBSP Mint, chopped1/2 cup White Rice1 TBSP Flour1/4 cup Liquid Egg Beaters1 TBSP Granulated Garlic1 can Tomato Sauce5lbs Potatoes, cut into pieces7 whole Carrots, cut into pieces2 Zucchinis, cut into pieces1 medium Yellow Onion, cut in half40oz Water
Directions
Boil rice in water for approximately 10 minutes.

Combine ground beef, chopped mint, flour, egg and rice. Make meatballs. Size of meatballs at your discretion.

In large pot, add water and meatballs. Boil until meat is cooked thoroughly. Add cut potatoes, carrots, zucchinis, onion and tomato sauce.

Simmer for two hours.

Makes 15 servings.
