Butternut Apple Squash Soup

Ingredients
2 cups butternut squash2 onions2 granny smith apples1/4 cup olive oil1 tsp sea salt3 cups vegetable stock2 tbsp ginger juice or grated ginger root1/4 tsp cinnamon1/4 tsp nutmegfresh dill to garnish
Directions
1) Dice onions. Peel and dice apples.
2) Half butternut squash.
3) Toss onions, apple, and squash in olive oil and salt.
4) Bake in large flat pan at 375 degrees for 45 minutes.
5) Spoon out butternut squash and place in saucepan.
6) Add onions, apples, stock, cinnamon, and nutmeg.
7) Cover and simmer for 15 minutes.
8) Blend until smooth or to desired consistency.
9) Add ginger and stir.
10) Garnish with fresh dill.
