Italian Chicken and Beans

Ingredients
1 Tbsp. canola oil2 boneless, skinless chicken breasts, cut in bite size pieces1/2 cup red bell pepper, diced1 medium onion, diced1 can cannelini beans, drained and rinsed1 can diced tomatoes1 tsp. dried Italian seasoning2 Tbsp. grated Parmesan cheese
Directions
Heat canola oil in large skillet. Saute chicken, onion, and pepper until chicken is lightly browned. Spread beans over top, tomatoes over the beans, and sprinkle with seasoning. Reduce heat and cook covered for about 10 minutes. Remove cover and increase heat for a few minutes to reduce liquid. Sprinkle with parmesan.
