Ingredients
Egg Whites, 1 ServingSpinach, Fresh 1 cupOnions, raw 1 cupRed Ripe Tomatoes, 1 cup chopped or slicedGorgonzola Crumbles 2 tbspSalt, dashPepper, dashGorgonzola can be substituted with Feta
Directions
Start with Onions in a skillet with non stick cooking spray. Cook for 2-3 minutes then add tomatoes and spinach. Cook for another minute and a half. Then add scrambled egg whites. Top with a dash of salt and pepper and your gorgonzola crumbles.
