Vegan Chick'n & Dumblings

Ingredients
1 medium onion, chopped4 cloves garlic chopped3 stalks celery chopped10 baby carrots chopped2 medium russet potatoes cubed2 packages Smart Strips Chick'n Strips chopped1 10oz bag of frozen peas2-32oz containers of vegetable broth16 oz of water1/2 cup of whole wheat flour2 Tbsp olive oilsalt and pepperDumplings:2 cups whole wheat flour1 tsp salt1/3 cup soy milk3 Tbsp Earth Balance1 Tbsp Baking powder
Directions
Heat olive oil in a big soup pot and add your chopped onion, garlic, and celery, saute until soft. Add 1/2 cup flour and half of one of the containers of broth and stir until flour is completely mixed in. Add the rest of the broth, water, and all other ingredients (you may need to put some of this into another pot).
Bring to a boil and then cover and simmer for 30 mns. Mix together dumpling mixture and when soup is done cooking, making golf ball size balls and drop into the top of the pot. Cover and cook at a good simmer for another 10 mns. Serve. Makes 10 - 1 cup servings. Enjoy!
