Ashley's Meatloaf

Ingredients
3/4 cup diced onion2/3 cup bread crumbs1/3 cup lemon juice1 egg, slightly beaten1/2 tsp salt1/4 tsp pepperCrushed red pepper, to your choosingGarlic n Herb Spice for flavorTons of Bacon Bits (I used 1/3 of the container all together)2 1/2 lbs lean ground beefKetchup to cover top
Directions
In a large bowl, mix all ingredients except beef and ketchup. Add the beef. Mix well. Pack evenly into pan, coat with thin layer of bacon bits, cover with ketchup (I used a criss cross approach and it worked out pretty sweet =]

Bake for about 45 minutes or until the meatloaf it no longer pink inside.

Makes about 14 2" by 4" pieces
