Double Cheddar Burger with Grilled Onion & Horseradish Mustard

Ingredients
2 pounds ground sirloinSalt and freshly ground black pepper, to taste8 slices White Cheddar8 slices fat-free Yellow Cheddar8 whole wheat hamburger buns8 leaves Romaine lettuceHeinz One Carb Reduced Sugar Tomato Ketchup, as needed1/2 cup Dijon mustard2 tablespoons Horseradish sauce2 Vidalia onions, sliced crosswise, 1/4 inch thick slices2 tablespoons olive oilSalt and freshly ground black pepper, to taste
Directions
Preheat grill or a cast iron skillet to high.

Whisk mustard and horseradish sauce together in a small bowl. Set aside.

Divide the beef into 8 (4 oz) burgers. Season on both sides with salt substitute and pepper, to taste. Grill or cook for desired doneness. During last minutes of cooking add 2 slices of cheese to each burger, cover grill and let melt, approximately 1 minute. During the last few minutes of cooking, brush olive oil on both sides of the onions and season with salt substitute and pepper. Grill the onion slices for 3 to 4 minutes on each side until golden brown.

Place burger on bun and top with Horseradish Mustard, lettuce, grilled vidalia onions and ketchup.
