2 tbsp. fresh basil1 tbsp fresh parsley1 tbsp fresh oregano2 tsp. Salt3 tbsp. Olive oil1 cup Chicken broth1/4 cup Lemon juice1 Cucumber, peeled and chopped2 cloves garlic, minced1 cup finely chopped onion1 bell pepper, chopped8 Roma tomatoes
Peel tomatoes by plunging them in boiling water for 30 seconds then placing in cold water. Chop vegetables and herbs. Add chicken broth, lemon juice, olive oil and salt. Chill and serve. Makes 8 one-cup servings.
