Chicken in Creamy Orange Sauce

3 Chicken Breast (about 22 OZ chicken)4 tbsp Sherry to de-glaze pan1 3/4 cup Fresh Squeezed Orange Juice3 spring onions, chopped29 grams corn flour3 oz 1/3 less fat Philadelphia Cream Cheese1/8 cup water
Cut chicken in half lengthwise, then into thirds.
Brown the chicken on both sides.
once the chicken is brown, put the brandy in to de-glaze the pan.
Add the orange juice and onions to the pan.
Simmer for 15 minutes, or until chicken is tender and runs with clear juice when pierced.
Mix the corn flour with the water to make a paste.
Add paste to low fat cream cheese until well mixed.
Stir cream cheese and corn flour mixture into the sauce.
Stir over medium heat until boiling.
Reduce heat and let sauce thicken for 5 to 10 minutes in pan.
Serve. Makes two large portions. Enjoy!
