1 tbsp. of olive oil2 garlic cloves2 large tomatoes(cut up)1 green pepper(cut up)1 medium onion(cut up)1 tbsp of crushed cilantro1 tbsp of tomato sauce1/2 cup of vegetable stock 1/2 tsp of oregano, basil, paprika, cuminDash of salt and pepper
Precut all veggies before you start. Turn on your stove to medium. Add a tbsp. of olive oil to your non-stick pan. Add the peppers, onions, cilantro and garlic. Mix in the oil, allow to sizzle for a bit , mix then add tomatoes, tomato sauce and stock. Allow to come to a boil until all veggies are tender. Makes two servings.
