Tasty Arugula & Spinach Salad

Ingredients
1 cup fresh spinach1 cup fresh arugula2 slices proscuitto2 oz sliced portabella mushrooms1/4 cup parmesan cheese, grated1 1/2 tsp extra virgin olive oil1/2 tsp balsamic or red wine vinegar
Directions
Mix arugula and spinach in a bowl.
Pan-fry proscuitto and mushrooms
Add proscuitto, mushrooms and parmesan cheese to salad.
Mix olive oil and vinegar and drizzle over salad.
