Mary's Eggs in a Basket

Ingredients
* *Smart Balance Light Buttery Spread with Flax Oil, .5 tbsp (remove) * Sara Lee, Delightful Wheat Bread, 1 slice, 2 serving (remove) * Egg, fresh, 2 large (remove) * *Smuckers Low Sugar Strawberry Preserves, 0.5 tbsp (remove)
Directions
Preheat a flat non stick skillet on med heat. Spread the butter spread on all side of the bread. Use a glass or biscuit cutter to cut out a circle in the center of the bread. Put all four pieces in skillet and crack each egg letting it fill the open center of bread. I also sprinkle eggs with a pinch of salt and pepper. After a couple of minutes turn all pieces over, toasting bread and cooking the eggs to your taste. I prefer cooking eggs to an over medium so I will have some yolk to run onto bread. That should take a couple more minutes. Then I remove from pan and use the jelly on the little circles. Enjoy!!!

    The first time I had eggs in a basket was not too long ago, my boyfriend made it for me for breakfast. Sadly, he didn't make it as healthy as this, but I do prefer this recipe over his! lol It's a very tasty breakfast! - 9/9/09
