Party Warmer Veggie Roll-Up

An easy to make mix for pizza dough.A zucchini cut into stripsA red pepper.Mozzarella cheese.Parmesan cheese.Some butter.
Preheat over to 350
Roast the red pepper and remove the skin. Slice the pepper into strips. ( I have a gas oven so do this over the burner, if you are electric place the pepper under the broiler. Once roasted place the pepper in a plastic bag to sweat for a few minuted. The skin will slide off.
Slice the zucchini into strips. I salt and pepper them drizzle a dash of olive oil on them, spreading the salt, pepper and oil over them. Add place these under the broiler for a few minutes so that they are not raw.
Make the dough mix adding butter and grated Parmesan. You could also add a sprinkle of Italian spices. Break the dough up into 10 balls.
Flatten a ball out making it thin somewhat oval shaped...this does not have to be neat! Cut the oval in half. Place .25 oz of mozzarella, a strip of pepper and zucchini, and roll it up.
I place this on a foil cover baking sheet.
Bake them till browned, takes about 20-25 minutes.
These are great for a party, and they taste good at room temperature too.
I've done this with tomato and asparagus, made pockets with tomato and basil...very versatile!
