Picillo Strawberry Cheesecake Dessert

Cream Cheese, 1/3 Less Fat Neufchatel Cheese, 12 oz Egg substitute, liquid (Egg Beaters), 1\2 cup Splenda, 1/2 cupVanilla 1/2 tsp Water, tap, .5 cup Nabisco Reduced Fat Vanilla Wafers 12 wafersJello sugar free, Strawberry, 2 serving Strawberries, fresh, 8 large (1-3/8" dia)
1. Preheat oven to 350° F. Line muffin tins with 12 foil cupcake papers. Place a vanilla wafer in the bottom of each cupcake paper.
2. In mixing bowl, beat room tempurature cream cheese until smooth. Add sugar and vanilla and mix well. Add eggs beaters and beat until smooth.
3. Pour cheesecake mixture into muffin tins. Bake for 20 minutes or until centers are almost set. Cool. Refrigerate 1-2 hours.
4. In a large bowl, place chopped strawberries and mash until you have smal chuncks and some juices. Add water and Jello mixture. Stir well. Top the cheesecake with topping and enjoy.
