Gala & Cinnamon crisps

Gala apples, or other sweet crisp applescinnamonQuantities whimsical!
If you don't have a mandolin slicer, ask a friend to borrow one. If you still can't get one, then grab a very sharp knife and a potato peeler!
You can peel the apples and leave the thin peels with the mix, they will crisp up very nicely!
Slice your apples paper-thin or as close as you can get.
I find it helps to toss them with cinnamon in a bowl or bag, but you can just sprinkle the cinnamon over them if you prefer.
Spread them on a baking sheet (you must grease the sheet or wax paper before you lay them down or they will stick!) make sure they do not overlap or else you will have soggy bits.
[if you aren't doing thin, wide slices but doing thin sticks or lots of little peels then you can toss them around and let them overlap a little, however the less overlap the better!]
Bake for one hour at 275F and then turn (or stir!) and bake for another hour. The house will smell good and I recommend this recipe if you need an excuse to warm up the kitchen!
The should be crunchy but not burned.
