2-3 slices of good whole grain bread - trim crusts 4 large tomatoes - peeled and chopped2 cucumbers - peeled and choppped 1/2 large sweet onion (chopped)2 cloves of garic - chopped 4 Tbs Olive Oil 5 Tbs Vinegar 1/2 Tsp Cumin 2 Tsp Salt
Wet Bread with water and let sit for a few minutes
Peel Tomatos and Cucumbers and chop
Chop onion
puree in blender or food processor
transfer to separate bowl
squeeze water from bread and place bread in blender and puree.
While the blender is running slowly drizzle olive oil to mix with bread.
Add a few cups of your vegetable puree to this and blend again.
Add spices and vinegar
transfer what was in blender to the remainder of the vegetables and stir.
Add water if you think it's too thick
