Portabella Mushroom Fajitas

8 oz portabella mushrooms (baby bella or caps, stems removed)1 large onion, cut into strips2 medium green bell peppers, cored, seeded and cut into strips1 large red bell pepper, cored, seeded, and cut into strips1/4 cup balsamic vinegar2 T extra virgin olive oil2 T minced garlic1/4 tsp dried thyme1/4 tsp freshly ground black pepper1/2 tsp cumin powder1/4 cup water (optional, see note in instructions) **
In a small mixing bowl, combine water, oil, balsamic vinegar, thyme, pepper, garlic, and cumin. Mix well.
Heat skillet over medium-high heat. Add oil mixture and cook for about 1 minute. Add all vegetables and cook till soft or at desired tenderness, about 10 minutes. **If there is too much water in the bottom of skillet, turn heat up to high and cook till liquid is evaporated. It might cause slight charring of vegetables, which adds to the flavor. Serve with warm tortillas and your favorite toppings.
