Spiced Rum Peach Butter

10-12 medium peaches, peeled, pitted and coarsely chopped1/2 cup spiced rum1/2 tsp cinnamon1 1/4 cup sugar1/4-1/2 cup water
It is super easy to peel peaches for cooked recipes like this if you put them in a pot of boiling water for a minute, then immerse in freezing cold ice water for another minute or two. The skins just slide right off. Make sure to use peaches that you would actually want to eat. Green peaches will soften, but not ripen, so it will not be very tasty if you use too hard of a peach.
1)Put all the ingredients in your crock pot.
2)Turn it on low.
3)Put the lid on, vented. (I use a butter knife across the opening before putting the lid on. Steam needs to be able to escape in order for the butter to reduce).
4)Let sit for 10-12 hours, checking occasionally to make sure there aren't any spots that are burning. (REALLY shouldn't happen!!! If there are, just pour out the peach butter into another container and clean out the burned spot, then pour the butter back in and let it get back to doing its own thing!)
5)Butter is done when it doesn't slide off the back of a wooden spoon.
6)Smooth with an immersion blender if desired.
Can be canned immediately using sanitary canning techniques.
Or
put in a container and stored in the fridge for 2-3 months
Or
be frozen for time immemorial!
I got about 3 cups of peach butter out of this. Nutritional information is for 10 peaches, and 1 TBSP servings.
