cheesy chicken and rice cassarole

* *Campbell's Cream of Chicken Soup (98% fat free), 1 cup (1-10oz can)* Water - 1 1/3 cup* White Rice, long grain - 3/4 cup* *Onion powder - 1/2 tsp* vegetables, any frozen - 2 cup* Chicken Breast- boneless, skinless - 4* Reduced Fat Cheese - 1/2 cup
1. Stir soup, water, rice, vegetables (I like corn and peas), and onion pwder in 12"x8" shallow baking dish.
2. Top with chicken. Season chicken as desired (I like to srinkle w/ lime, balck pepper, garlic powder, & a touch of seasoned salt). Cover.
3. Bake @ 375 for 45 min OR until done (check rice). Top w/ cheese.
MAKES 4 SERVINGS.
Tips: Can substitute quick cooking brown rice. I like to cook for ~ 40 min, uncover, add cheese, cook an additional 7-8 min. Let stand ~5 min before serving
