Cinnamon Walnut Apple Muffin

Ingredients
2 1/3 cups all-purpose flour1 cup plus 2 table spoons sugar3 teaspoons ground cinnamon2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt2 eggs1 1/3 cup milk 1%1/3 cup reduced fat ricotta cheese3 tablespoons canola oil2 teaspoons vanilla extract1 1/2 cups finely chopped apples(tart)1 cup walnuts
Directions
Combine all ingredients except walnuts and apples. Mix well. Fold in apple and walnuts.Pour into muffin paper-liners

Bake at 400 for about 20 minutes

Makes about 12 1/2 muffins
