Sun dried tomato quinoa

Ingredients
1 tsp vegetable oil1 medium sized onion2 cloves garlic8 sun dried tomato pieces3/4 cup quinoa
Directions
heat pan over medium
chop the onion and grate the garlic
add oil to the pan
add onion and cook until lightly brown
add the garlic and quinoa
stir until quinoa is coated in the little oil left
add sun dried tomatoes and enough water to cover all the ingredients
simmer on low to medium for 25 minutes or until quinoa is done to liking, adding more water as needed
