1 1/3 c quinoa flour1 tsp baking powder.5 tsp baking soda1.5 tsp cinnamon1/2 c. raisins2 eggs1/3c br. sugar2/3 c. plain low fat yogurt2 1/4 c. (235 grams) grated carrot
makes 12 muffins.
Mix flour, baking powder, baking soda, cinnamon and raisins. Set aside. Wisk sugar, eggs, yogurt. Stir in carrot. Add flour mixture to carrot mixture. Spoon into muffin cups. Bake 20-24 min @ 350
