Banana Chocolate Chip Pancakes

Ingredients
1.5 c. flour (I use whole wheat)1 Tbsp. sugar2 t. Baking powder1/4 t. salt1/8 t. ground ginger2 ripe bananas, mashed1 c. fat-free milk1 large egg, lightly beaten1 t. vanilla extract1/4 c. mini chocolate chips
Directions
Combine flour, sugar, baking powder, salt and ginger in a bowl. In a seperate bowl, combine the bananas, milk, egg and vanilla. Stir flour mixture into the banana mixture until smooth. Gently fold in the mini chocolate chips. Let the batter stand at room temperature for 10 - 15 minutes.

Preheat a nonstick griddle or skillet over medium heat. Using a scant 1/4 c. for each pancake, pour the batter onto the pan. Cook just until the tops are covered with bubbles and the edges are browned, 2 -3 minutes. Flip and cook until browned, about 2 minutes longer. Serve immediately.
