Crepes

Ingredients
1 1/2 c. milk1/2 c. all-purpose flour1/2 c. whole-wheat flour2 eggs1 T. canola oil1/4 tsp. salt
Directions
In a bowl combine milk, flours, eggs, oil and salt. Beat until well mixed. Heat a lightly greased 6-inch skillet to spread batter. Return to heat; brown on one side only. (Or, cook on an inverted crepe maker according to manufacturer's directions.) Invert pan over paper towels; remove crepe. Repeat with remaining batter, greasing skillet occasionally. You can fill with you choice of fruit and cottage cheese - or anything else your imagination thinks of. Makes 18
