Quick Chicken Cacciatore

Ingredients
4 boneless skinless chicken breasts2 medium zucchini, sliced1 small onion cut into large pieces2 cup fresh mushrooms, cleaned and sliced4 T olive oil1 tsp salt1/2 tsp. black pepper1/2 tsp garlic powder1 tsp. turkish oregano2 tsp basil1/4 tsp fennel seed, crushed1 T water1 14 oz can diced tomatoes2 cups tomato sauce
Directions
Preheat the oven to 375 degrees. In a small bowl, mix together the salt, spices, and water and set aside. Wash and pat dry the chicken. Heat a large skillet over medium-high heat. Add 1 T olive oil. When hot add the chicken cook 2-3 minutes per side until nicely browned. Remove to a plate and add 1-2 T olive oil and brown the zucchini and onion and then 1 T olive oil and brown the mushrooms. Add the tomatoes and the tomato sauce to the spices. Pour 1/2 the tomato mixture into the bottom of a 9X13 pan. Place the vegetable on the sauce and the chicken on top of the vegetable. Pour the remaining tomato mixture over the chicken. Cover and bake for 30-40 minutes. Makes 4 servings.
