Turkey Stuffed Meatloaf

2.5 pounds Ground Turkey3 med tomatoes1 Green Bell Pepper1 cup Mushroom slicescan tomato sauce1/4 onion8 slices lunch ham1.5 cups Italian bread crumbs12 oz Ricotta cheese1/2 cup cottage cheese1 cup milk2 eggs3/4 cup marinated artichoke hearts1 tbsp oregano2 tsp black pepper1tsp salt1 tbsp Chives1 tsp Paprika16 Green Olives (sliced)
Chop up and mix all of the tomatoes, peppers, onion, artichoke, mushrooms with 2/3 of the tomato sauce. Set veggie mix aside. Combine remaining ingredients, except the other half of the tomato sauce. Flatten turkey mixture on a cookie sheet and place veggie mix on top of half of the ham slices in the center.. Cover veggie mixture with remaining ham slices. Pull the turkey up from the sides to form into a loaf with the veggie mixture in the middle. Pour remaining tomato sauce over loaf. Cook 90 minutes at 400 degrees.
