Spinach Fritada (Ester's famous!)

Ingredients
spinach, cheese, milk, eggs, seasonings, bechamel.
Directions
Preheat oven to 380 degrees.
Blend all ingredients together for a muddy consistency.
Pour into a rectangular or large circular pyrex dish, the bottom of which is coated with canola or other oil.

10-15 minutes into cooking time coat spinach fritata with a coating of bechamel (milk + butter + flour mixture that you prepare on the stovetop) for a creamier/cheesier appearance.

Bake for another 30-35 minutes. Total baking time should be about 45 minutes.
