My Lemon and Orange Muffins

Ingredients

2 cups flour2 tsps baking powder3/4 cup sugar75gms butter1 egg1 cup milkgrated peel from orange or lemon rind1/4 cup lemon juice1/4 cup sugar
Sift flour, baking powder and sugar into a large bowl.
Heat and melt butter. Add egg, milk and peel. Mix together quickly with a fork.
Add liquid ingredients to dry ingredients. Don't over mix. Only mix til mixture is dampened.
Spoon divided portions into muffin pans (I use silicon puffin pans, so no spraying or greasing needed).
Bake in preheated oven at 200 C for around 10-15 minutes - or until muffins spring back when touched.
Once out of the oven, spoon lemon juice and sugar syrup over each muffin. Leave for a few minutes, then place on baking rack to cool.

I tryed making these in a loaf pan. It worked! just adjust to 350 F for 45 mins. Thanks for sharing the recipe. - 10/9/10
