Libby's Favorite Italian Rice Salad

Ingredients
1 cups long grain white rice2 1/2 cups water1 cup frozen peas1 cup of julienned carrots1/2 cup cucumber cubed1/2 cup green onions (green only) chopped1/2 cup of oil and vinegar dressing (add more if it is too dry!)Salt and pepper to taste
Directions
Cook rice according to directions. Add frozen peas once the rice has cooled slightly, then add the julienned carrots and dressing. Let chill approximately 1 hour in the refrigerator before serving. Add cucumbers cubes and chopped green onions just before serving, Add salt and pepper to taste.

Makes approximately 6 1-cup servings
