Mock Egg Salad

Ingredients
1 block soft tofu1/2 tbl tahini2 tsp mustard1/4 tsp Spike seasoningdash or two cayenne pepper
Directions
Drain and mash tofu in a bowl. Add remaining ingredients and stir to combine. Flavors are enhanced when allowed to chill--if your kids will wait long enough.

(A tsp or two of honey can be added for a sweeter taste.)

Makes 8 1/4 cup servings
