Spanish Brown Rice

Ingredients
1/2 medium onion, chopped1/2 medium bell pepper, chopped1 T olive oil1 1/2 C brown rice3 C low-sodium chicken broth or water1/4 t salt2 t garlic powder3 oz. tomato paste (1/2 a can)
Directions
Coat saucepan with olive oil and warm over medium heat. Saute onion and bell pepper until tender about 3 minutes. Add rice and toast for about 2 minutes stirring frequently. Add broth, tomato paste, salt and garlic powder. Turn heat to high and bring to a boil. Reduce heat, cover and allow rice to simmer for 45-60 minutes according to package directions. Fluff with fork and serve.
