1 lb. chicken breast1/2 yellow onion, chopped5 garlic cloves, chopped1/4 c. chopped water chestnuts1/4 c. gluten-free soy sauce (I used La Choy Lite)1/4 c. dry white wine (I just used white cooking wine)2 T. balsamic vinegar1/2 tsp. ground ginger1/8 tsp. ground allspice16 romaine lettuce leavesplum sauce--1/3 c. plum jam, 1 T. gluten free soy sauce, 1 T. sugar, 1 tsp garlic powder.
Use a 4 qt. slow cooker. Chop the chicken into teeny tiny chunks, and put into the slow cooker. Add the onion, garlic, and water chestnuts, if using. Mix in the liquid ingredients and spices. Cover and cook on low for 6 hours, or on high for 3-4 hours. Serve in lettuce leaves with plum sauce.
These were fantastic. My kids had seconds. I never did figure out quite how to wrap them in the lettuce leaves. We served it over rice and it was incredible.
