Black Bean & Corn Salad

Ingredients
4 tbsp lime or lemon juice or 2+2 of each1 tbsp olive oil1 tbsp chopped fresh cilantro, or to taste1 large clove garlic, minced1/2 tsp oregano1/2 tsp cumin1/8 tsp salt1 15-oz can black beans, drained and rinsed1 15-oz can corn, drained (Also try grilled/roasted corn removed from the cob or pan fry the corn first)1/2 cup each, diced green and red pepper1/4 cup diced purple onion
Directions
Mix the first seven ingredients.
Add the remaining ingredients and mix well.
Chill for one hour before serving.

Makes 8 one-half cup servings
