Oriental spelt salad

Ingredients
1 small onion, chopped5 small carrots, diced2 patty pan squash, cubedTrader Joe's Spelt with Green and Red peppers (1 box)Trader Joe's Soy Ginger Broth (1 carton)60 cherry tomatoes4 tbspns wasabi ginger vinaigrette
Directions
Cook Trader Joe's Spelt with Green and Red peppers with a quart of Trader Joe's Soy Ginger Broth till cooked.

Saute onions, carrots, squash in a non stick pan with some water till crisp tender. Mix with vinaigrette

Combine the crisp tender veggies and the cooked spelt. Divide into 6 servings. Garnish with 10 cherry tomatoes each.
