Bret's blueberry muffins

Ingredients
1 1/2 cups all-purpose flour3/4 cup sugar2 tsp baking powder1/3 cup canola oil1 egg1 1/2 cups fresh blueberries1/3 cup skim milk
Directions
1. preheat oven to 400 degrees. Prepare muffin tin.

2. Mix flour, sugar and baking powder. Place oil in one cup measuring cup; add egg and enough milk to fill the cup. Add this to flour mixture. Fold in blueberries. Fill each muffin cup 2/3 full.

3. Bake for 20-25 minutes or until done

Makes a dozen muffins

    These muffins went together very quickly. I only added 1/2 cup sugar and I used egg substitute.
    I sprinkled just a little sugar over each muffin. They turned out great! Will make again. - 7/25/18
