Ingredients
1 lb Jennie-O Hot Turkey Italian Sausage1 lb Jennie-O Italian Seasoned Ground Turkey2 T butter1 green pepper, diced1 red pepper, diced1 medium red onion, diced3 cloves of garlic, minced1 yellow squash, diced1 zucchini, diced28oz Diced Tomatoes with Garlic, Basil & Oregano28oz Tomato Sauce28oz Water2 cans of Cannellini beans2 cups ditalini pasta, dry
Directions
Remove casings from sausage and brown with ground turkey meat. In separate large pot, sauté peppers, onions and garlic in butter. Season to taste (I use Tastefully Simple Season Salt). Do not cook all the way because the veggies will continue to cook while the soup simmers. Add squash and zucchini, diced tomatoes, tomato sauce and water. Stir and bring to boil. Add the meat, beans and dry pasta. Simmer for at least 30 minutes. Make sure pasta is fully cooked before serving. Top with parmesan cheese before serving.
