Chicken/Spinich Casserole

Ingredients

Chicken breast tenders skinned, 1 lbCream of mushroom soup 1 cnWild rice 1 cpWhite rice 1cpSpinich 2 cpsOnions, raw 1 cpmushrooms raw 2 cpsTurnip (or rutabega) diced 1cpGarlic pwder (or 1 clove diced) 1 tbspSalt (seasoned) & pepper to tasteOlive oil 1 tbsp
Prepare 9 X 13 casserole dish with
pam or olive oil set aside
Cook rice as instructed on label (less 1/4 cp water
Dice ALL veggies to consistant size set aside
Reserve 1/2 the spinich
Cut tenders in 1/2
Brown lightly in olive oil (2/3 min on high heat, remove set aside
Carmelize 1/2 the onions
Place rice in casserole dish, mix all ingredients
placing chicken over top, then reserved spinich over the chicken
Salt & pepper to taste
Heat mushroom soup (1/4 cp water added) and spread over entire casserole
Cover with lid or foil
Place in preheated oven (350) let cook for 40 to 50 min (aldente) or to 60 to 70 min
Note: all ovens vary, check periodically, if needed add a small amount of water.
Makes approx. 10 1 cup servings
