Shrimp and Cucumber Salad

1 large english cucumber, seeded, quartered and sliced1 small red onion, quartered and sliced thin1 medium apple, eighthed and sliced1 T olive oil1 T lemon juice1 T lime juicedash of pepper
Makes about 8 one cup servings
1) cut the cucumber in half and seed the cucumber with a spoon then slice into quarters and slice thin - pou into non-metal bowl
2) peel onion, cut in quarters and slice thin - add to cucumbers
3) cut and core apples, slice into small pieces (cut apple into eighth or more before slicing) - add to cucumbers and onions
4) in a blender pour olive oil, lemon juice, lime juice, and black pepper
5) once the dressing is well blended, pour over salad and stir
6) can be eaten right away but is best if refrigerated for a time
