Richard Simmons Slim n Trim Mac and Cheese

Ingredients
3.5 cups of macaroni1.75 cups cottage cheese 7 oz (about 3/4 cup)shredded reduced fat cheddar3 T parmesan, shredded.5 cup evaporated milk.5 cup onion, chopped3 T parsley, chopped2 tsp dijon mustard2 slices of Morningstar Bac'n, crumbled1 slice of Arnold's Double Fiber, crumbledPreheat oven to 350. Cook bac'n slices in microwave for 45 seconds.Combine macaroni, cheddar, onion, and parsley in a bowl. In a blender add cottage cheese, milk, and dijon mustard. Blend until smooth. Pour over macaroni mixture. Stir to combine. Put in 2 quart casserole. In a small bowl add parmesan, bread crumbs, and bac'n 5 sprays with I Can't Believe it's Not Butter. Sprinkle mixture over macaroni. Bake in over for 20 minutes.
