1 -15oz. container part skim ricotta1 -15oz. fat free ricotta1/3 cup flour2/3 cups sugar1 tsp. cinnamon1/4 tsp. nutmeg (optional)1 tbl. fresh lemon juice1 tsp. vanilla6 eggs
preheat oven to 300 degrees Whip containers of ricotta for two minutes or til smooth. Add sugar, flour, cinnamon, fresh lemon juice and vanilla. Mix until blended. Add 1 egg at a time, beating after each addition. Lightly spray a cassarole dish and add contents. Bake for 60 to 90 minutes. Cool and refrigerate. Makes 10 servings
