Stuffed Tomatoes with herbs, parmesan and swiss

4 Medium Ripe Tomatoes2 tbsp chopped Basil1 tbsp chopped Oregano1 tsp chopped Thyme1 clove of crushed Garlic30 grams of shredded Swiss Cheese2 tbsp of Shedded Parmesan1/2 tsp Salt1 tsp ground Black Pepper2 tbsp Extra Virgin Olive Oil2 slices of Whole Weat Bread
Makes 4 Servings
Cut the top off of the tomatoes and hollow them out, throw away insides or use for another recipe. Place the hollow tomatoes upside down on paper towel to drain juice while you prepare the rest of the recipe.
In a bowl mix basil, oregano, thyme, garlic, swiss cheese, parmesan, salt and pepper. Mix well. The two slices of fresh bread to to be cut to crumb size or slightly larger. I use a food processor to make my crumbs. Add the crumbs to the mixture and mix well. Pour one tbsp of the olive oil into the mixture and stir well.
Stuff each Tomato to the top with the mixture and put on a baking sheet with non stick spray. Use the remaining tbsp of olive oil to pour on top of the four stuffed tomatoes.
Bake for 20 mins at 350 degrees celcius. Serve hot.
