Potato Poblano Soup

Ingredients
2 chicken breasts, cooked, diced1.5 tbsp butter5 small or 4 medium poblano peppers, seeded & diced3 onions, diced1 carrot, diced6 cups chicken broth3 small or 2 medium potatos, diced1.5 fat free half & half1 c reduced fat cheddar cheese
Directions
add peppers, onions and carrot to butter for 5 minutes
Add broth and potatoes, cook about 30 minutes
Add half & half and precooked chicken
Remove from heat and add cheddar right before serving just until melted
