Low Cal Broccoli Soup

Ingredients
1 broccoli head, 1 medium onion, 1 leek, 4 cloves garlic, 2 medium potatoes, large can chicken broth, 1 tbsp curry powder, Olive oil (3 tbsp) salt & pepper to taste
Directions
Chop all vegetables. Coat bottom of large soup pot with olive oil (3 tbsp), add chopped onion, leek, and garlic, saute until softened/transluscent. Add broccoli (chopped stalk and floret), and potato, briefly saute with onions etc. Add chicken broth until vegetables just covered, allow to cook until veggies soften (forkable). Using a hand held mixer, puree soup right in pot. Add curry, salt and pepper to taste. enjoy!
